Также будет неизвестный символ в элементе <weathersearches><search><term><temperature> вызовет у меня какие-либо ошибки или я должен удалить его оттуда?

Прежде всего, ваш вывод не выглядит корректным xml вообще, он должен иметь формат ниже, где

  1. Заголовок сообщает, что кодировка UTF-8 будет обрабатывать ваши специальные символы
  2. Используйте DocumentBuilderFactory для написания вашего xml
