Вы также пропускаете mov es,ax после mov ax, 0x1000 на самом деле установить регистр сегмента, где вы хотите, чтобы ваш код был загружен в.

Вы не можете читать ISO с помощью функции CHS (AH=02h), вы должны использовать функцию LBA (AH=42h) с блоком параметров. Есть пример.
